The Gift of Homemade Butterscotch Pie

If  I could sell homemade butterscotch pie in my gift baskets at www.uniquegourmetgiftbasket.com I would probably have more business than I could keep up with.   I know lemon meringue and chocolate are also big favorites but there is just something about butterscotch.  With Valentine's Day  coming you might want to treat someone to this special dessert.  I have a recipe that I will share with you.  It is very easy and delicious.  The interesting part is that it is made in the micro wave and I am not one to cook with the micro wave, but it is fast and did I mention delicious.  It has a rich butterscotch candy taste to it.
Butterscotch Pie Filling
Combine the following in a microwaveable bowl
1 cup of brown sugar
2 tablespoons of flour
pinch of salt

Combine 2 cups of milk and 3 egg yolks

Mix the dry and the wet together carefully so it doesn't get lumpy.
Microwave for 1 minute and mix
Keep on microwaving and stopping to mix
When it is thick remove and ad 1 tablespoon of butter and 1 tsp of vanilla

Pour into a precooked pie crust.
Top with whipped cream or meringue.
